Refried Bean Tostadas




 Tonight for dinner was a really simple meal. I have made my own tortillas and refried beans many times, but for a quick meal it doesn't get any easier than this. I just used a package of tostada shells and a can of refried beans. This barely qualifies as a recipe, but I will say that I really like the way that I modify canned refried beans. It is pretty simple, but makes a big difference in the flavor.

I also want to point out that these are a great food storage recipe because they work well with a lot of shelf stable or freezer friendly toppings. The toppings that we like include guacamole - and if you haven't heard, you can buy bags of frozen avocados at Costco!! Love it!! They defrost beautifully, and you can use them straight or in guacamole. You can also use either fresh cheese from the fridge, or just sprinkle with a little bit of Parmesan from a can to get the feel of Cotija cheese. Both work great. Again, you can either use fresh tomatoes, pico de gallo or just a canned salsa. All work great and taste delicious.

RECIPE

1 package premade tostada shells

1 can refried beans

2 tablespoons butter

1/8 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon chili powder

1/4 cup water

Parmesan Cheese

Salsa/Pico de Gallo/Taco Sauce

Guacamole/Avocado

Cilantro


Instructions:

Warm up beans with butter, garlic powder, onion powder, chili powder, and water (you can use more or less water depending on how runny you like your beans). When the beans are warm, place a scoop on a tostada shell and sprinkle with desired toppings.
