There is nothing more comforting to me than the smell of freshly baked bread. This recipe is a combination of three of my very favorite recipes. I love it. It slices well and stays fresh for several days (if I make enough batches that it lasts that long).
RECIPE
1 Tablespoon active dry yeast (or one packet)
1/4 cup warm water
1 teaspoon sugar
1/3 cup vegetable oil
1/4 c honey
1/4 c brown sugar
1 1/2 cups bread flour, (or all purpose flour with a
tablespoon of gluten)
1 Tablespoon salt
2 1/2 cups warm water
5 cups whole wheat flour
Combine yeast, water and sugar to activate yeast. When it is
bubbly add in oil, honey, sugar, white flour, salt and the rest of the warm
water. Mix for five minutes. Add in
whole wheat flour until the dough is soft, but not sticky (about 5 cups). Mix 5
more minutes to develop gluten.
Let it rise in a warm place until double in size. (about an
hour)
Punch down and form into two loaves. Place in two greased
loaf pans.
Cover and allow dough to rise again until double in size.
(about 45 minutes)
Bake at 350 degrees for about 35 minutes.
