When I was in college I received some applesauce cookies from a neighbor, and thought they were delicious. They reminded me of an apple cinnamon muffin in cookie form. I had never had anything quite like them, so I got the recipe from her. For years the recipe sat forlornly in my recipe box, until I heard about "breakfast cookies." In my mind the cookies would taste just like those I received so many years earlier, but when I looked at the different recipes they weren't really what I was looking for, so I decided to try to create my own breakfast cookies. This recipe is much healthier than the original, but keeps the same apple cinnamon muffin vibe without any added sugar or oil.
RECIPE
1/2 cup maple syrup*
1/4 cup SWERVE sweetener (or add extra syrup)*
1 cup applesauce
1 egg
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups rolled oats
3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon vanilla
1/4 cup dark chocolate chips (optional)
Instructions:
Mix everything except for chocolate chips to form a thick batter. Scoop onto well-greased cookie sheet. If desired, top each cookie with 4-6 chocolate chips and bake 12-15 minutes at 375 degrees.
NOTE:
*feel free to substitute 3/4 cup brown sugar for the other sweeteners for a more shelf stable option.
