Oh, Covid-19, how we long to be rid of you! Sadly, it seems to be only getting worse around these parts. I have been taking meals to quite a few people who have had the virus (leaving the food on the doorstep and then texting when I'm in my car). With the weather getting cooler I feel like one of the best "sick foods" I can take is a nice batch of soup. Today I took some cheesy potato and chicken noodle to a family member who is fighting Covid. Chicken noodle soup is such a comfort food, and it can easily be prepared with many food storage items including dried veggies, noodles and canned chicken. Today I used fresh ingredients, but have used both without anyone being the wiser.
RECIPE
2 Tablespoons vegetable oil
1 onion, diced
2 carrots, sliced
2 ribs celery, diced
4 cups chicken broth (or 4 cups water & 4 teaspoons chicken bouillon)
2 chicken breasts, cooked & diced (you can also use rotisserie or canned chicken)
1 cup country egg pasta
1/4 teaspoon sage
1/4 teaspoon thyme
1/2 teaspoon parsley
salt and pepper to taste
Instructions:
Sauté onion, carrots & celery in vegetable oil over medium heat until onions are soft. Add chicken broth & egg noodles. Cook until noodles are soft. Add chicken, sage, thyme, parsley, salt, and pepper and cook until warm.
