Pantry Pasta with Vegan Cream Sauce


 Here is a new to me recipe that I found on the Bon Apetit website. The title speaks to the potential for a great food storage meal. The only thing that wouldn't be easily stored is the lemon, and you could easily substitute a little bit of canned lemon juice or citric acid in a pinch. My family enjoyed it, and thought it was a fun change to our typical pasta sauces. With the beans it reminded me a little bit of a fancy chili-mac. The original recipe calls for tubular pasta, but any bite-sized pasta will work great in this recipe. I also substituted basil & oregano for the rosemary because my hubby can spot rosemary from a mile away and asks me why I want to cook with a pine tree :)
