I know that Split Pea Soup is a love it or hate it kind of food. Around here, we love it. I think it is so cozy. One of my daughters is vegetarian, so I always just offer the bacon as a garnish, making it a great meal for meat eaters or vegetarians. I have used fresh and dried carrots, onions and celery depending on what I have on hand, and both work great. If I use the dried vegetables everything in this is shelf stable and can be used straight from food storage. It is also a great recipe for the instant pot. Just use six cups of vegetable broth (or chicken broth if you prefer) instead of 8.
RECIPE
1 onion, diced
2 carrots, diced
1 pound dried split peas
6-8 cups vegetable or chicken broth (6 if using the instant pot 8 if using the stove)
1/4 teaspoon thyme
1/4 teaspoon celery seed
1 bay leaf
salt and pepper to taste
bacon to garnish
fresh mint or parsley to garnish
Rinse and sort peas. Place in pot on stove or instant pot with onion, carrots, broth, thyme, bay leaf and celery seed. For the instant pot, cook it on high pressure according to the manufacturer's directions for 15 minutes. Allow the steam to release naturally (about 40 minutes or so).
On the stove, bring it to a boil, then drop heat to low, and let it simmer for about 90 minutes, covered. Keep an eye on the moisture and add water if it gets too low.
Add salt, pepper, herbs and bacon if desired.
