Growing up we always used homemade pancake mix. I loved it, but have modified the recipe we used growing up to be a little healthier. I love this mix because it uses a lot of my food storage items like powdered milk and dehydrated eggs that I typically wouldn't use unless it was an emergency. This recipe is for a BIG batch. I will either store it in gallon bags or a large container with a lid.
RECIPE
5 cups whole wheat flour
1 cup oats, blended into flour
4 cups white flour
1/2 cup sugar (you can also use a sugar alternative like SWERVE)
2 tablespoons salt
2 1/2 cups instant powdered milk
1/4 cup baking powder
1 cup powdered eggs (I typically use a combination of whole powdered eggs & egg whites)
In a very LARGE bowl, combine all ingredients until well mixed. Store in air-tight container, and use as needed.
INSTRUCTIONS FOR MAKING PANCAKES
Combine 1 1/2 cups of pancake mix with 1 1/4 cups water & 3 tablespoons vegetable oil. Mix with a fork and cook on hot, greased griddle.
