Well, today we get to start our official Covid quarantine. One of my daughters, who is a total introvert, by the way, came down with the nasty bug. I decided that this is the perfect opportunity to do some good food storage meal planning. I started today with noodles & peanut sauce because I had a cucumber in the fridge, and although you can certainly eat this without carrots, cucumbers or cilantro, it really is delicious with julienned veggies on top! Hopefully, if I can stay healthy, I will continue to post some good food storage based meals.
RECIPE
Sauce:
1/2 cup peanut butter (crunchy if you like the added nuts)
1 cup water
1/4 cup soy sauce
1 Tablespoon Sesame Oil
1/2 teaspoon garlic powder
1 teaspoon ginger powder
1/4 cup honey
1/2-1 teaspoon Sambal Oelek (or sriracha sauce, but I prefer the Sambal)
1 lb spaghetti
1 large cucumber, julienne sliced
1 large carrot, julienne sliced
1/4 cup fresh cilantro
edamame
dry roasted peanuts to garnish
grilled chicken (we only use a little because we have 3 pseudo vegetarians at our house, but use as much as you want.
Directions:
Boil noodles in salted water to al dente. Drain. While noodles are cooking whisk all sauce ingredients together.in a sauce pan and simmer.
Toss noodles and sauce together and top with your choice of chicken, cucumber, carrot, cilantro, edamame (I usually just cook up a bag from the freezer and offer them on the side, and let people put them on top if desired.)
